Cooking With The Seasons
When your mission is to serve the community with food that’s sourced and produced locally, it means the food you acquire is going to be in season. There’s no better way to showcase good food than getting it while it’s in season.
We’ve been resolutely building strong relationships with farmers, food artisans, and other local food purveyors since we opened our doors. For the past two years we’ve been working directly with a Farmer in Lancaster, Pennsylvania to grow custom crops from non-gmo seeds. We pay regular farm visits to the people who raise our animals, tend to our honey, make our cheese, vinify our wine, grow our fruit. See our source list to see who and where they are.
Not many caterers, if any, are likely to be receiving entire sides of beef or whole pigs every week from local farms. We work with a fourth generation family of German Farmers and Butchers in Pine Plains, New York to satisfy all of our beef and pork needs. This is the only way know of that guarantees us a first-hand look at how our animals were raised and slaughtered. This ambitious program is what drives us to cure and smoke our own hams, bacon, prepare guanciale, bresaola, lardo, and porchetta di testa. We even make dog treats out of the liver.
We were born a restaurant and have grown into catering organically. The passion, energy and enthusiasm that drives us to serve nearly 100,000 meals every year informs our catering sensibilities.
